Beer tasting

Sorry if Im asking alot of questions, just like to learn. I have looked through the FAQ's and other threads on the site

I see some people are tasting the beer as it progresses. Is there a better time to do a taste test? Is it as easy as popping the top open, grab a small glass and then re seal or just wait it out til the bottles are chilled??

I taste the Hydrometer samples only. No reason to waste it, right?

So you just star sans a ladle and throw it in the glass? Sweet. I will try it once my primary is done, before moving to the secondary.
