So the owner of my LHBS (Roger Gentile - great guy) ordered me three vials of White Labs pitchable Sake yeast, and I bought all three of them, in case I needed them. Well, I didn't and now I have two vials that are set to 'expire' on the 26th of next month.
I know that yeast is tougher than that. What do I have to do to keep it around? In general, what should I be doing to recycle / save / culture my own yeast? Do any of you have a favorite thread, article or chapter that you reference?
