After listening to the brewing network's broadcast on Firestone Walker beers, I refined my recipe and brewed it last month. My LHBS did not have Simcoe hops, so I subbed Columbus and hoped for the best....
Its been 30 days since brewday, and I tasted it side by side with FW Union Jack today. Very close! Slightly more citrus & carmel than the real thing, but very close and very enjoyable!

I have a question. You said your boil time was 90 min, 7.2 Gallons, for a 5.5 gallon batch...I'm guessing your boil-off is pretty high?
Also, can you break this down for me?

Are you mashing 4.73 gal, then batch sparging with an additional 2.47 gal to reach a boil volume of 7.2?
Finally, is 90 min necessary here?
Did mashing at 148° work out? That seems low to me.
What was your final gravity reading?
