In my reading (Noonan) I've come across the terms Kiln and Roast.
What is the difference bewteen Malt that has bene put in a kiln (kilned?) and Malt that is roasted?
A kiln can be used for drying, at lower temperatures, but can also produce high temperatures.
Is the difference that a kiln subjects a substance to high indirect heat while roasting directly exposes the substance to flame?
How is roasted malt/grain different from Malt/grain that is kilned at the same temperature?
