Hello - I'm planning to make my first attempt at a Saison using Sorachi Ace hops. I'm basing my recipe off the "Saison Ete" recipe in Zymurgy Magazine. My question is about the hop profile. If using Sorachi hops, should I just use those for aroma & flavoring, and use the suggested Styrian Goldings for the first addition? I'd like to have a nice robust Sorachi flavor... Thoughts? Thanks!
 
Bittering is the least important hop addition in terms of varietal character. No problem switching to all Sorachi, just make sure you take the higher AA% into account when figuring out your addition. Good luck.
