I made a Saison a week ago. it is still fermenting.
I'm flying to a month and a half vacation in India in two weeks D) so I'm wondering what to do regarding when to bottle it.
should I bottle it after I come back? (10 weeks in primary)
should I bottle it just before I leave? (3 weeks in primary)
or should I rack to a secondary and bottle when I come back? (3 weeks in primary, 7 in secondary)
am I supposed to age Saisons in secondary, anyway?
