Does anyone know if the recipes in the "Homebrewer's Recipe Guide" book are assuming dry or liquid extract?
I'm going to try my first non-kit beer, using the Saison recipe from this book. The book says an O.G. of 1.05, but I'm not sure if the measurements are liquid or dry extract...
I tried putting them into the "Brew Pal" iPhone app, and the closest I can get to an O.G. is if I use liquid extract, but even then it's high at 1.057. So that brings me to a separate question which is specific to that app and maybe I'll ask elsewhere - if I add 2 lbs of Crystal 40L to the grain bill, does that assume I'm going to actually mash them (or whatever it's called), cuz I only plan on steeping them. So maybe that's why I can't match the 1.05 of the recipe?

3 1/3 lbs light malt extract
3 1/3 lbs amber malt extract
2 lbs crystal malt (40L)
1/2 lbs flaked barley
hops, yeast, etc...
