I'm hoping to do my first unhopped extract kit in a week or so and it would be great to get some tips/ideas and recipes.

I am planning on doing a full boil with a late extract addition in the last 20 min as I've read it gives the best results. I was thinking of doing a Scottish 80 but I'm not sure if that will be over my head. I am also considering a hefier as I can't refrigerate bucket or carboy.

So any suggestions?
 
i don't think a scottish 80 will be over your head. if you want that style, go for it. i'd try to use a neutral ale yeast like wyeast 1056/wlp001 in case it gets a little warm during fermentation. try to get it in the coolest spot in your house and let her rip. the late extract addition seems to work well with many people, so i say go for it. and kudos on doing a full boil, you'll like the results.
