So today I finally decided to quit chucking my grains and start putting them to use and the result was chocolate zucchini bread!
This makes either 2 8x4 loaves or 4 5x3 mini loaves, which is what I do.
1 3/4 c spent grain flour
1/4 c white flour
2 c sugar
1 c vegetable oil
2 c grated zucchini
3 eggs
1 ts baking soda
1 ts salt
1 ts vanilla extract
1 ts pumpkin spice (or cinnamon)
1 c chocolate chips
Prehead oven to 350F
Melt 1/4 c of chocolate chips
Mix sugar, eggs oil, zucchini and melted chocolate together. Then the flour, baking soda, salt, and cinnamon. From there, fold in the remaining chocolate chips. Divide the mix into your bread pans an put in the oven for about an hour.
I wish I had a picture for you, but sadly my creations didn't last long enough...
