I just bottled yesterday, and I was surprised with what I tasted. This was just a simple Ale, (Amber malt, cascade hops, finshing hops and Ale Yeast), so I expected more of a Sierra Nevada taste, because the taste of the beer was good when I racked from primary to secondary. But, when I tasted my green beer when I bottled it was very bitter, not like before, it was more of a sweet taste earlier. I'm assuming this is normal, but the taste really changed in the ten days while my beer sat in the secondary. Any ideas why?
