Hello everyone,

I want to start doing some 2.5 gallon batches. I understand that a 5 or 6 gallon carboy will have too much headspace for secondary conditioning, but what about for primary fermentation? Is a 6.5 gallon Ale Pail ok for this because of the fermentation activity? Will all of the oxygen be displaced or is that too large for a primary?

Ale Pail or 5 Gallon carboys will be fine. During fermentation the Co2 released will create a blanket on top of the beer. I use a 5 gallon carboy for my 2.5 gallon batches and have not had any problems.

Second that. The large fermenter is fine for primary. And bonus: you'll never have to set up a blow off.

There are 3 gallon glass carboys on the market that you can use for secondary.
