last new years we brewed up our inaugural barley wine. a bit of honey. we will be sipping this honey laced monster as we brew.

this year we are keeping the tradition, but have tweaked the recipe.

10 lbs pale malt
5 lbs munich malt
.5 lbs biscuit malt
.5 lb of some roast barley depending...

.5 oz ekg fwp i like how it subsided the hot break and boil over in my last brew...
2 oz of chin0ock hops kettle
1 oz ekg for flavor/aroma...

i have a huge cake of white labs irish ale yeast. says it can handle upwards of ten percent alcohol.

the hard bit is going to be getting the sparge to take a day and a half to get all the juice out :)

og is estimated at 1.096

Do it every year and eventually you'll be able to do a 10-tap vertical tasting.


Quickly followed by horizontal.
 
finished up about 8pm last night, mash for about two hours, set up new hlt with 55l rectangular cooler, it's gonna get turned into a mash/lauter tun, sparged for well over an hour, boiled just shy of two hours and collected six gallons, crammed it into the 6.5 gallon carboy.

got the gravity dialed in....1.096

cleaned up the blow off from the ceiling at 0630, first one i ever got to pop and get the ceiling! sounded like a champaign cork...
