besides cascade...what hops are considered to be truly "American"? i am trying to 'americanize' some recipes and would like to make substitutions in the hop to achieve this goal. help me out here hopheads!

Do you mean US "tasting" hops, widely grown US hops, or varieties developed in the US?
Depending on which, some ideas:
Simcoe, Amarillo, Wilamette, Chinook, Cluster, Crystal, Centennial, Horizon, Galena, Liberty, Mt Hood, Tomahawk, Nugget, Warrior
