Amount Item Type % or IBU
8.50 lb Pale Malt (2 Row) US (2.0 SRM) Grain 82.9 %
1.25 lb Caramel/Crystal Malt - 60L (60.0 SRM) Grain 12.2 %
0.50 lb Cara-Pils/Dextrine (2.0 SRM) Grain 4.9 %

Batch size 5.5 gal - Boil volume 7 gal OG 1.051

I want a hoppy flavor and aroma. I use an immersion chiller and do not whirlpool.

This is what I have to work with.

½ oz Summit 18.1%
3 oz Cascade 8.9%

I have brewed this a couple times and its good, I'm just not getting the hop character I'm looking for. Bitterness is great with an IBU of 38. I understand that moving some IBUs towards the end of the boil should give me what I'm looking for.

This is what the hop schedule looked like before.

0.38 oz Summit [18.10%] (60 min) Hops 25.2 IBU
0.50 oz Cascade [8.90%] (30 min) Hops 8.3 IBU
0.25 oz Cascade [8.90%] (15 min) Hops 2.2 IBU
0.25 oz Cascade [8.90%] (8 min) Hops 1.6 IBU
1.00 oz Cascade [8.90%] (Dry Hop 5 days) Hops -

Go for a hop bursting method then. ALL the hops are from 20 minutes forward.

Something like:
1oz Cascade 15 minutes
1oz Cascade 10 minutes
1oz Cascade 5 minutes
,5oz Summit 5 minutes
IBU: 39.6

Get more hops if you want to dry hop it later. If you're kegging, try putting 1-2oz of whole hops into the keg (in a nylon hop bag) and letting it carbonate via the slow method (2 weeks at serving pressure and temperature).
