I made 10gal of Ed Worts APA hoped with all Amarillo. I picked S-05 in one and S-04 in the Others. Those 2 Yeasts are Night and Day.

I mashed @ 154 for 60min and then batched sparged.

The S-05 finished out fairly dry @ 1.006 but it was very clean and good.
I might mash higher next time, if my thermometer is not out of Calibration.
Anyone have S-05 finish to Dry?

The S-04 finished @ 1.012 with some residual sweetness with alittle fruity Easters. I think that it goes nicely with the Amarillo. Alot of poeple like or hate the S-04. Right now i really like it in this beer

Both beers fermented with the room Temp @ 62, so the beer Temp did get up to 68-70 when active fermentation was underway.

68-70 is a little too warm for S-04 in my experience, I prefer it fermented around 63-65
