i think im just going to go with a basic chedder recipe and add alittle horseradish and sliced jalepenos. should i use fresh, dried, canned for the jalepenos?

You're supposed to use "pickled" jalepenos. If they are fresh, they'll rot while the cheese cures. The pickled ones have a low enough pH to stay good, but I have used canned chilis with success, too.
