Set and Forget at 70 degrees then cool to 40....question

My keezer temperature is not regulated yet so I am force carbing my beer (with the set and forget method) at room temperature (70 degrees) and will later cool the beer.

My question is, what temperature should I use to gauge how much psi to apply during force carbonation? 70 degrees or 40 degrees?
 
70 degrees. After it's carbed and you chill it, the pressure will drop proportionally.
 
What pressure are you using at 70? I need to do this next month and all the scales stop at 65. I figured 30 psi, but that's just a guess.
 
Just make sure that you reduce the pressure when you chill it. At 40° F, anything over about 10 psi is going to overcarb your beer pretty quickly. It's easy to up the carbonation level if you find it's too low, but it's quite hard to reduce the carbonation level once you've overshot it. :mug:
