How cold is too cold? I have seen people post on this forum and others that they always brew their ales in the low 60's. However, the While Labs site indicates that the optimal range for the 001 is 68 - 73. Does anyone out there know if 001 will do its normal great job at, say, 63? (My fermentation frig is occupied with a lager and I'd like to brew an ale this weekend using 001. I have a walk-in wine closet that keeps a constant 58 - 60 ambient temp. This should result in a fermentation temp in the 62 to 65 range.) Any thoughts?
 
63 is perfect. Try to keep it above 60, but you should get a nice, clean ferment. Pull it out and let it warm as activity slows to help it finish up.
 
I use this yeast all the time and usually ferment at 62. It works great, you have nothing to worry about.
