So, I tried my first batch of Apfelwein tonight. With such a simple recipe, you wouldn't think I could screw things up, but...
As I added the last bit of apple juice, the juice overflowed the carboy. A lot of the yeast also flowed out. Some yeast is in the carboy, but it might be half of the package.
Should I:
Adding yeast would increase the risk of some sort of infection, but without enough yeast, I might end up with just extra sweet apple juice.
Anyone been here before? Thx.

- Go to LHBS tomorrow and get more yeast
