I have a stock pile of Safale S-04 that I need to use up. I have an RIS I brew every spring with an SG of 1.090ish. I usually use WLP0005 with a 1L starter but I figured I would sub that out and use up my S-04. I have 4 packs. How many should I pitch? I have never switched it up between liquid and dry, but I wanted to save the money and not waste my dry yeast.

The 11g packet I counted had 150 billion cells. For 5 gallons of a 1.090 ale you would want about 300 billon cells. So two packs should be good. The viability of the yeast seems to be very dependant on how you hydrate it. Use a bowl with a large surface area, or even your ale pail. if the yeast are spread out more they don't sink as early and hydrate better.
