- This is a fantastic floral/citrus/herbal summer ale, light in body but flavorfull
I made my own toasted malt in the oven, and it yeilded an amazing light orange color and slight biscuit note that is just great. The real magic here is allowing the 20 ibu to shine. I fermented this beer at five days at 55 degrees and then slowly raised it over the course of the following two weeks to 73 degrees. As a result the beer is CLEAN and CRISP, but attenuated fully. THis allows the hops to shine. The spalter hops are in the forefront with the cascades/ammarillos on the finish saying "hey, remember me? mr citrus?", cleaning up after the noble/herbal/spicy/mild spalter hops. The honey and extended mash help us achieve our 1.007 FG>
This beer is %6 abv, light in body and very intersting. Great for summer time. I have two kegs of this and am so glad that I do!
This is summertime in a glass...brew it now and keg it up!
