What would be a good option for an estery yeast for a true to style bavarian Hefe. I am looking for that banna clove aroma and tatse to come through!
 
I've used wyeast weihenstephan several times. It is a great yeast. Ferments like a beast. It will definitely give the banana / clove flavors you are looking for. I start my fermentation in the mid 60's and let it slowly rise to around 72 over 4 day's. This gives me the banana/clove flavor. I have always reached FG in that time.
 
Good point fbold1, i should have mentioned that. I use fermcap-s for every brew and this is the only one that i have to use a blow off on.
