These things, honestly, look like glorified garbage cans, but I'm thinking about using one for a big, 15 gallon batch i'm doing with friends. Most of them don't even come with lids and I haven't seen one yet that comes with a hole for the airlock. They're supposedly mostly used for wine - anyone ever used one of these? Are they as safe or as good as any other fermenter?

Pros? Cons? Issues we may run into?

Sounds perfect....at some point in history, beer probably started out as someone's fermented garbage water...so what better to ferment in than a big garbage can. Seriously, if it isn't scratched up and you can reasonably keep dust and dirt out of it, it should be fine. Keep in mind that shape and geometry of the fermenter can have an impact on yeast performance...ie..shallow and wide vs. narrow and deep.
