shank size and collar thickness

I have read a lot of the keezer build threads and can't find the answer I need. I plan on having three taps on my keezer w/ collar. How thick are most of you making you'r collar and how long of a shank do I need.

I have 4" shanks. Wood is 1" thick, so is the insulation.

Thanks Xtant, that helps alot. I am going to order all my hardware tomorrow and wanted to make sure I ordered the right things.
