what kind of alcohol content would you expect from homemade ginger beer that was made using baker's yeast and allowed to sit for 2 - 3 weeks?
 
There is no way to know without more information. Alcohol content is completely dependent upon the amount of sugar available for fermentation. Did you take a gravity reading? That would be a good place to start try to figure out the ABV.
