60a plug question

Is this plug acceptable to use on a 240V 4 wire system? I know it states 120/208, but why couldn't I wire it up for 240 4 wire?
 
I think the bigger issue is that, the plug is for 3 phase use and the indivdual legs for use in 240V single phase will not support 60A. I am planning on splitting up the feeds into two 30A circuits and keeping the cost of plugs and cable down. Those 60A 240 single phase plugs and recepticles get expensive plus the #4/4 cable. Anyone else chime in on this?
