The only one I've ever had was the Sam Adams Bonfire in a sampler last fall and was the only beer I can remember saying "wow" to myself after drinking. Does anyone have a good recipe? Is it relatively easy? I'm quite the novice so extract only.

The best rauchbier I've ever tried was Southern Star's. It's a SMaSH recipe, consisting of nothing but Weyermann rauchmalz, Hallertau Tradition hops, and the Carlsberg strain.

You can't make a rauchbier with extract. Sorry.

Dammit!

Learn how to mini-mash (it's not that hard). You should be able to make a good rauchbier with ~3-5# of rauchmalt, it doesn't *have* to be 100% of the grain bill. A Munich malt extract would be a good source for a big chunk of your extract.
