1pound honey
2pounds vienna malt
1pound wheat malt
1pound cara red

no hops

nottingham yeast
possibly champagne yeast added nottingham in complete depending on fg
 
Interesting. I've never used cara red, so I'm not certain exactly what it'll add other than some residual sweetness. Other than that, I'd say there is no reason an ale yeast wouldn't take it dry, might be an interesting combination. I'm guessing you're doing a mini-mash. Let us know how it turns out.

I was thinking of doing the same thing with 2 lbs light lme and dme. Just want to keep a little sweetness in the cider without the artificial sweetner. Let us know how it is
