So, I am wanting to brew this Oskar Blues Old Chub Scotch ale recipe listed below, however I would like to up the ABV to around 10% and possibly oak some of it. I was wondering if I should up the Hops and if so how much to keep it balanced. I obviously don't want it too sweet.
Thanks for any suggestions!

Old Chub
5 gallon batch
OG 1.078
FG 1.020
IBU 35
SRM 32
ABV 7.4%

13lb 10 oz north american 2-row
18 oz English dark Crystal
12 oz Munish
3.5 oz English chocolate malt
6 oz Special B
4.5 oz Weyermann smoked malt

9.6 AAU Nugget hops 60 min (0.8 oz 12%AA)

Wyeast 1056 American Ale 69F

Mash @ 155 1 hour
90 minute boil

If you used some software to make this recipe, just play around with the numbers to up your ABV and then adjust the hops to match your current IBUs if it changes significantly enough.

There is a graph of IBU vs OG floating around somewhere. If I was at home I could post it... Search for that on google it will give you a good idea how much you will need I boost the IBUs to match the higher OG and still keep the same profile. I will post back if I find the link.
