So, I had my first Westmalle Tripel tonight. Nice! I've had Chimay but I'm thinking I like Westmalle's better. I'm definitely loving my Belgians!
 
I love my Belgians. There are a lot of good ones out there. I brew a lot of Belgians and have a good stock of them down my basement aging. I am brewing a dubbel tomorrow morning. Just did the starter a little while ago.

Which Chimay did you have? Red, White or Blue? All are different.
 
I've drank all.
I made a pretty good Chimay clone and just finished my last bottle tonight. I made a Dubbel but think the ABV was too high. Too alcoholly! Need to work on the recipe a little.

I just got done reading "Brewing like a Monk," which got me on the other Trappist beers. Good reading.

Just not enough time/money to brew IPAs and Belgian. Lol
