I need to get a Pale Ale knocked out next weekend, but I'll be brewing that in the next 3 weeks or so.
I agree, one of the best examples of a DIPA I've had. The bitterness was firm, but not tongue-strippingly bitter. The hop aroma is beyond intense. Citrus and tropical fruit. It's dry, but still very drinkable. I took one sip, and said: I'm going to brew this.
We flew to San Diego, so I couldn't bring any back with me. I'm driving out to OC this weekend, so I'm going to take home a bunch of this. I hear it's not going to be available in AZ until mid-July.
In terms of recipe formulation, it was pretty simple. It's a 95%/5% 2-row/C15 split. Ruination is bittered with CTZ and uses Centennial exclusively from there. 3.2oz is exactly 1lb/barrel in a 6gal batch. So all the hop additions are 1lb/barrel. The numbers all line up, and it looks right. Stone does a very long whirlpool addition with Ruination, so guessing the times for the flavor/aroma hops was tricky. I'm planning on a 30min and a 0min addition, with a 10 minute whirlpool post boil. We'll see. Too be honest, I don't think it's that critical. Throw 6.4oz of Centennial at the beer anywhere between 30minutes and flameout, and I bet it'll be hard to tell the difference on this recipe.
