Hey guys,

I made a starter for my Saison, 2 Fridays ago and still haven't used it. I decanted and have the yeast sitting in about an inch of wort. I won't be using until this weekend as I have hit some delays. I guess my questions is should I make another started for this yeast or do you think it will still be sufficient after two weeks in the fridge?

There is no need to make a new one, but it definitely won't hurt if you do. General rule of thumb for homebrewing is more yeast = more better.

If you wait and make it about 2-3 days before your brew day you can pitch right around high krausen, which should ensure a quick and active take off for your beer.
