Looking to make a 5 gallon extract lemon lime ale but I'm not sure how much zest to use or if I should use juice? I've head lemon zest if more powerfull that lime? any idead would be great.

What is the base recipe you are making? Without knowing I would suggest 1 lemon and 1 lime and soak the zest in some cheap vodka to sanitize it

You can either dry hop it or add at flame out
 
8# pale extract liquid
4oz dextrin
4oz crystal malt 20L
4oz maria otter
4oz toasted malt

2oz citra 60 min
.50oz pilot 60 min
1oz cascade 5 min

have not decided yeast

You appear to be making an American Pale Ale, with the hops you've selected I would not try to turn this into a lemon lime ale

You would be better off with a base of an Amercan wheat.

For the recipe you listed IMO use WY1056 yeast
