Bottling vs. topping off

I have been brewing kombucha for about 4-5 years now. I always bottle in grolsch/EZ cap style bottles. Last year my husband bought me a 1 gallon jug with a spigot (picture in the attached photo on the far right). I have heard about folks brewing bucha in such a container, and then continuously topping off the batch with new tea, so I gave it a try. Wondering if anyone does this, and if so, what advice you have. It has been fermenting now for a few weeks and ready to drink, but I need some advice before starting the topping off process. Being a beer brewer before I was brewing kombucha, this is terrifying to me in terms of potential contamination.
