I've got an apartment electric stove that I use for extract brewing and it works okay, but it's a pretty painful wait to boil 3 gallons and if I get a little aggressive on the amount of wort it even struggles to maintain a boil without the lid on. I can't upgrade the stove, so that got me wondering about the kettle. I have a thin walled Midwest "economy" kettle; would a better heavy duty/thick walled kettle help this by having better heat retention, or is this wishful thinking?
