Tasting Notes
Light ale. Citrus notes from use of Simcoe Hops
22# American Two Row Pale Malt
1oz Simcoe 60 minutes
1oz Simcoe 30 minutes
2oz Simcoe 0 minutes (I use a hop back)
I mash at 149
Cal Ale Yeast.

I start fermenting around 65 for the first few days and let it finish off around 72 degrees to clean up any diacetyl

The point of this beer is to have a sessionable lighter beer that still has some good hop flavor and it works very well for that. The Simcoe character is pretty strong right away. I think that this beer mellows and and clears up pretty good after being in the keg for about two weeks.

This would be a good candidate for dry hoping, making a fruit beer, using a randalizer, etc.
