I was just informed that next year there may be a competition very close to me. I would like to make something now so it can age and be ready. Any suggestions as I have never been in a competition before?

i don't have any other details. The competition is still in the planning stages. So far they are thinking of focusing on wines and cheese made in the county we live in. This will be open to amateur wine makers. I have no other details at this point.

I'd say go for apfelwein. It's hard to screw up and can taste very good after a year. Also, you might get local juice if you can... since it's focusing on local stuff, using local apples would probably be a plus.

Good luck!
