I'm working from an RIS extract kit, which calls for s-04 yeast. I don't have s-04, but I do have us-05. I'm wondering how this will change the profile of the beer and if it would be better to wait until my LHBS has s-04. I want to brew this weekend, so will pitch the us-05 if it is feasible. I like drier stouts, so am not worried if it's somewhat drier than s-04 would produce.
Here is the basic recipe:
Steep: .5 lbs Simpson's roasted barley, .5 lbs Simpson's black malt, .5 lbs Simpson's chocolate malt.
6 lbs. Dark Malt Extract (60 min.)
6 lbs. Dark Malt Extract (15 min.)
2 oz. Galena (60 min.)
1.5 packs US-05 (calculated on Mr. Malty Pitching Calculator)
OG 1.087
