I forgot about this when I posted the photos of the HBT tour at NB brewery.
These aren't fermenters. They are yeast storage vessels! Do you think they make starters before they pitch?

no, they don't. each main brew's yeast will be collected and sent to these storage tanks. they'll collect enough sample for their brew, take a cell count, and adjust how much they pitch depending on final wort volume, cell count, and target pitch rate.
