I cooled my keg to 40f and set the psi to 30. My plan was to keep it at 40f and at 30psi without shaking for 36 hours then lower the presure to serving.

My question is I set it at 30 psi and placed the co2 canister in the fridge the psi dropped to around 25 is that due to the temp change and I should keep it at that psi or should I adjust my psi back to 30 psi in the fridge?

The regulator should give the same psi tothe keg no matter the temp. More than likely you set to 30 and the regulator didnt have time to "stabilize" usually takes a minute or two in my experience.
