For coils inside the jockey box can you use copper tubing instead of SS?
 
No, you really shouldn't. You don't want finished beer to touch copper. It would probably not be too harmful in the short term but it's really not worth it if you can avoid doing it.
 
hear carbonated liquid + copper/brass is not good idea.

go with alminum or buy a chiller plate. if you can find a chiller plate off a pop machine, it works great. many used restaurant equipment places has them kicking. I bought 2 for $30. new will be somewhere around $300 for one.
