I am looking fwd to trying Simcoe for the first time, with Columbus for bittering and Simcoe for the late additions. How do you feel the hops are blending in your brew? I dont have Zythos but I do have an oz of Chinook, and plenty of Simcoe and Columbus.
Glad your first scratch batch is turning out well.

I think it should come together well. The hopping schedule is inspired from Avery Maharajah but I used zythos for centennial and altered the profile just a bit. The corn sugar addition was inspired from Pliny to dry it out and bring out the hop front end. Time will tell. Probably wont taste it again until I get back from vacation in a couple of weeks!
