I have a Belgian Wit that will be ready to package soon, and the W3944 yeast cake is beautiful! I'd really like to wash it and split it up for my next two brews, but I am out of wheat. I am looking for recipes or suggested uses of this yeast strain sans wheat.
 
Something along the lines of a Belgian Pale Ale would be perfect IMHO. OG somewhere around 1.050, ~20-25 IBUs, probably a 1 oz blend of Saaz, EKG, and Styrian Goldings at flameout if you want more hop character, definitely some Biscuit or Aromatic in the grainbill, and a fair amount of flaked wheat as well.

Well, that's what I would do at least.
