I know Diacytl causes butter flavors...but I have a beer that was great about a week ago, and now it tastes like nasty fake butter! WTF! is this some kind of infection?

If diacetyl shows up in a previously good beer, and gets worse, thats usually a sign of a lacto infection.

Youre right Yoop. I got my beer spoilage bacteria confused! I know some lacto can throw a good bit of diacetyl, but you would also notice a distinct sourness.

Maybe its just me, but I don't like bleach. Its smelly, ruins my clothes and doesn't sit well with my fiancee who has asthma. I think 2 good HOT PBW soaks followed by Starsan, or sanitizer of your choice will suffice. Replacing your lines might not be a bad idea.

If the batch is bottled, you are stuck with it. If the batch is kegged, you can make a nice US-05 starter and ferment out most of it.

Or, you can just pour it on your popcorn.

;)

why couldn't it be a tasty infection... like miley cyrus!!
