So, I am wanting to brew this Oskar Blues Old Chub Scotch ale recipe listed below, however I would like to up the ABV to around 10% and possibly oak some of it. I was wondering if I should up the Hops and if so how much to keep it balanced. I obviously don't want it too sweet.

Mash @ 155 1 hour
90 minute boil
