If you are adding your own yeast, you can use any cider at all, except cider with added preservatives. Make sure there isn't any sorbate listed in the ingredients.

Unpasteurized cider would be needed if you were doing a wild yeast fermentation.

If you are using unpasteurized cider, and planning on adding your own wine or cider yeast, you should use campden tablets to kill the wild yeast and bacteria present in the cider.
