I just got my 12v pump in the mail from http://ussolarpumps.com/. I'm trying scavenge a power supply from around my office and have come across a 12v 2A power supply from an external hard enclosure.

The voltage is correct, but the amperage is where the question lies. Since the power supply has an output of 2A and my pump pulls at max 1.25A I'm thinking I should be fine.

Am I correct in my thinking?

The pump maxes out at 15W.

Yes, you should be fine. The pump will only draw what it's requirements are I.e. 1.25A.

Typically that is fine, provided the power supply's rated current output is higher than that of the load. Some switching power supplies are a little funny with the load, like they don't like a super light load and won't even run under those conditions, but with the specs you gave it sounds perfectly fine.
