It unsure on what rackin actually is? Is it just syphoning from the first bucket to the demijohn?
 
If i was to rack the wine more than once wud i need another demijohn?

Ideally, yes. Otherwise, you'd have to move the wine to another sanitized vessel, dump the lees out of the demijohn and wash it. Resanitize the demijohn and rack the wine back into the demijohn, top up with water or a similar wine, and re-airlocked. You'd risk some oxidation by racking twice, plus racking to a vessel with a wider headspace once fermentation has slowed/stopped.
