Hey Folks! I was lucky enough to be given some fresh westmalle yeast from a local yeast supplier. In looking at supplies, I see I have Saaz and Styrian Goldings laying around, along with some sweet orange peels and grains of paradise. Belgian pale, here we come, especially, since the fermenter is full, but the closet is open and sitting around 70!

Haven't done a belgian since I started all grain-ing a couple years ago, but did some reading up and came up with what appears to be a relatively (for a belgian) standard recipe- I would love feedback from the more experienced brewers here. I figure if I brew at night, I can get the temp down to 65 in the garage overnight to pitch cold, then move it into the house once fermentation starts, letting fermentation ramp up that way, respecting the yeast to do their thing, but not afraid of slightly higher temps, to allow the yeast to do their thing. How did I do with specialty grains? Base constitution? Anything I may be missing?
