I have some White Labs witbier yeast. It's at least 6 months old, probably more like 9-12. It's from a previous batch that I just scooped out of the trub after primary fermentation. It's been in my fridge the whole time.

I made a starter and it is doing well.

My question is: Is this still okay to use? It's been kept cold the whole time, and it was fresh from the first batch. And like I said, the starter is doing very well right now.

Every time I've used that wit yeast, it blows off like crazy, so if nothing else, you'll know pretty well that it's going.

The starter was absolutely a success.

I made another, slightly larger starter and dumped the first starter into it. It's now going well too. Stepping it up for a beer I'm brewing next week.

I'm going to start saving portions of every yeast I use if it's this easy to get it going after nearly a year in the fridge.
